Who are your favourite fictional animals? Preferably from books, and I'm happy with mythical animals too.

I'm going to go with Faulkner and Emerson, a crow and a cat, respectively, from A Magical Bookshop Mystery by Amanda Flower. And Zoloto, a puppy from Cold War by Keira Andrews.
