Here is a list focused on foraging cookbooks. A couple of useful warnings if you're new to foraging: check your local foraging laws, avoid polluted sites, know and avoid picking your locally endangered species, do not eat if you're not 1000% sure (image recognition is not enough), always leave some for the wildlife and your fellow foragers and learn to recognise your local toxic species!

Being from a European country, the books I've added up until now are mostly about plants I am familiar with, which is why this list is mainly comprised of books catering to plants in the northern hemisphere, and especially Europe and Northern America. I would love to expand my knowledge, so suggestions for books from all over the world are welcome!
