Yes!!!! Thank you for this list, this is my favorite genre of cookbook.

I will recommend the Sad Bastard Cookbook by Rachel A. Rosen and Zilla Novikov. It's one of the only cookbooks I've seen that will truly meet you where you're at, even if you're at "spoonful of peanut butter straight from the jar." And it has recommendations for how to incrementally bump up the taste/nutritional value of low-spoon meals like instant ramen, with different variants depending on how much energy you have. Also the digital version is free on itch.io!
