suggestions! the chinese classics are quite long (since you've got tons of penguin classics you could use that version): romance of the three kingdoms by luo guanzhong
dreams of the red chamber by cao xueqin - the penguin classics editions breaks it into 5 volumes and the first is "story of the stone" which alone is 500+ pgs
marcel proust's "in search of lost time" is 4k+ pgs (it's actually the longest classic in the penguin collection lol), also broken into volumes, the first being "swann's way" /french
