Incredible overview and detailed explanation on how colonialism and racism is related to current, modern-day food issues in the US. The chapter on milk/dairy was especially enlightening (and depressing). I'm definitely wanting to read more books on this topic and will be thinking about this book for a while. Everyone (especially those of us in the US) should read this book.
