Haven't read it yet but Women Who Run with the Wolves: Myths and Stories of the Wild Woman Archetype by Clarissa Pinkola Estés covers a lot of fairy tales and folk stories through the eyes of psychology
Yeeah I guess I should add that, although I have serious issues with that book 😅😅
If you don't mind me asking, why would you personally not recommend it?
Pinkola Estés makes some claims about folklore that are not true (e.g. claiming a Wolverine Woman is part of Hungarian folklore, where no such thing exists). Also, she heavily rewrites the stories she then analyses as part of some ancient collective wisdom. With multiple stories, she has completely changed the ending or the meaning of the tale. Her retellings are beautiful, but it gets iffy when she analyses them without stating they have been changed.

It might be too specific, but Strange Terrain by Barbara Rieti is fantastic. It's a study of fairy folklore in Newfoundland
