I also know Sarah Waters is like classic lesbian historical fiction too

What a great list! 🤗 I have some suggestions: All the White Spaces by Ally Wilkes, The Woods All Black by Lee Mandelo, Wildthorn by Jane Eagland, A Shore Thing and A Rare Find, both by Johanna Lowell, could fit here. If you are open to also adding graphic novels, I'd also like to suggest The Ghostkeeper by Johanna Taylor and I Shall Never Fall In Love by Hari Conner.
