Ok your lists are absolutely fascinating. Jamrach’s Menagerie by Carol Birch might suit your fancy…

I just found a copy of Jamrach's menagerie at my favorite second hand book store!! thank you for the recommendation!

Context for this list: A mix of fiction and non-fiction books where shipwrecks, plane crashes, bad weather, or other extenuating circumstances lead to survivors of disasters resorting to cannibalism. I have not included dystopian or apocalyptic in general on this list as I feel those stories are of a different ethos. I have also prioritized books that I already own or have read, partially because there are dozens of books written about events such as the Donner Party or the Andes Survivors, of varying qualities and relevance. As always I am open to suggestions!

The Hunger by Alma Katsu would fit here - its a take on the ordeal of The Donner Party, mostly from the perspective of Tamsin Donner.

The Hunger is already on this list! I also have The Indifferent Stars Above by Daniel James Brown and Ordeal by Hunger by George Stewart which are non-fiction accounts of The Donner Party ordeal.

I wasn't the biggest fan of The Hunger tbh but it definitely fits right in on this list!
