It’s the only one I have read yet from her series Climate Quartet, but each book can be read as an individual story. The others are: The History of Bees, The End of the Ocean and The Dream of a Tree. I feel like Annihilation by Jeff Vandermeer could be on this list; it's more of climate science fiction BUT still fits the bill. Additionally, How High We Go in the Dark by Sequoia Nagamatsu.
