Obsessed with this list. Why /aren't/ there more random cowboys in literature?
Really hesitant rec, since Iron Council does draw from a lot of western tropes (the train as a tool of westward expansion, guy that is a vaquero, etc.), but also like, idk. It's book 3 in what was once definitely a DnD campaign. Baleful polymorph, magic that removes the colors of things, flesh elementals, etc.

When I was making the list, a friend of mine insisted that Duncan Idaho met the "cowboy criteria," so I included it.
