This is such a cool list! May I recommend The Works of Vermin by Hiron Ennes? Ennes wrote it with rereadability in mind. I definitely felt like I needed to start from the very first chapter again during my reading because of how meanings changed as the book went on.
As a serial rereader, I very much approve of this concept 🙂↕️ For a suggestion, I feel like pretty much any of David Mitchell's books would fit here, but Cloud Atlas would be my personal pick to add to the list!

i also love a re-read!! Cloud Atlas has been on my list for maybe a decade 😶
David Mitchell was the first writer I got really into when I was moving from YA to adult literature, so I'll always have a soft spot for his work 💛 I've reread his first three novels (including Cloud Atlas) quite a few times, so I'm afraid I can't objectively evaluate their quality 😂 But if you do get around to reading Cloud Atlas I'd be very interested to see what you think!
